Diaspora Chicken

Ingredients

  • Marinade:
  • 6 jalapeño , chopped
  • 300g brown sugar
  • 1tbspn salt
  • 1 tbspn ground ginger
  • Tomato/olive sauce:
  • 180 ml olive oil
  • 3 cup finely chopped red onion
  • 120 cherry tomato halved
  • 120 pitted green olives
  • 180 ml balsamic vinegar

Directions

  1. Place jalapeño, brown sugar, ginger and salt in food processor and purée.
  2. Rub mixture over chicken. Cover and chill for at least one hr.
  3. Preheat oven to 375f.
  4. Arrange chicken on pan lined with parchment paper.
  5. Bake 30-35 min. Turn over and bake additional 20 min. Or until no longer pink.
  6. Heat olive oil in pan. Add onions and sauté one min. Add tomatoes and olives and vinegar. Heat through without over cooking Tom.
  7. Remove chicken from pan to serving plate and top with sauce.
