Double Chocolate Gluten Free Zucchini Bread

Ingredients

  • 2 ounces dark chocolate, chopped
  • 1 1/2 cups (210g) all purpose gluten free flour (We like cup4cup)
  • 1/2 teaspoon xanthan gum (omit if your blend already contains it)
  • 1/4 cup (20 g) unsweetened natural cocoa powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 cup (150g) granulated sugar
  • 4 ounces semi-sweet chocolate chips
  • 2 cups (200 g) grated fresh zucchini
  • 2 eggs (100 g, weighed out of shell) at room temperature, beaten
  • 6 tablespoons (84 g) neutral oil (canola, vegetable, grapeseed or peanut oil all work)
  • 1 teaspoon pure vanilla extract
