Slice the Tomatoes in half, dice the Mushrooms, spoon out the Avocado and dice it (both halves). Bung all the chopped veg and peas into the frying pan with some Coconut Oil and leave to cook for 5 mins, tossing the pan around every now and then.
After 5 mins, pour in the tin of Tomatoes give it a mix and crack the eggs onto the top of the mixture.
Finally, stick the pan under the grill (medium/high heat) for around 5/10 mins until the eggs are cooked.
