Enoki Beef Rollups

Ingredients

  • Thinly sliced beef (pork probably works too)
  • Enoki mushrooms
  • Perilla leaves (optional)
  • Bok choy
  • Onion, sliced
  • Soy sauce
  • Water
  • Garlic
  • Rice vinegar
  • Gochugaru
  • Sweetener
  • Egg
  • Scallions
  • Rice to serve

Directions

  1. Roll beef around enoki mushrooms (and perilla leaves if using)
  2. Mix sauce ingredients together
  3. Saute onion and bok choy
  4. Nestle rolls on top of bok choy/onion
  5. Pour sauce over top
  6. Cover and steam for 7 min
  7. Whisk eggs and season
  8. Pour eggs on top of rolls and cover, steam for another 1-2 min
  9. Top with scallions and serve with rice
