- 3 teaspoons vanilla bean paste
- 60ml (1/4 cup) boiling water
- 3 teaspoons gelatine powder
- 500g cream cheese, chopped, at room temperature
- 140g (2/3 cup) caster sugar
- 600ml carton thickened cream
- 125g strawberries, hulled, chopped, plus extra, halved, to serve
- Pink food colouring, to tint
- Mini vanilla meringues, to serve (see note)
- 1 tablespoon crushed freeze-dried strawberries
