Directions

  1. Preheat oven to 425 F
  2. Score fillets on skin side every 1/2 inch
  3. Lightly season with salt. Drizzle with olive oil. Rub in slits
  4. Turn over and dust with cajun seasoning
  5. Place skin side down on hot oven safe pan. Push down and cook for 1-2 minutes depending on thickness
  6. Flip over and cook for 20 seconds. Return to skin side down and place in oven for 3-4 minutes
  7. Remove and plate skin side up
