Fried Rice

Ingredients

  • 1 tbsp oil
  • 1 large onion, chopped
  • 3-4 rashers bacon, chopped
  • 1 cup brown rice
  • 1 egg
  • 1 cup mixed veggies (peas, beans, corn)
  • 2 chicken stock cubes
  • 3 cups hot water
  • Soy sauce, to taste

Directions

  1. Heat oil in a pan and fry the onion, bacon and rice until browned.
  2. Clear a space in the centre, crack in the egg and fry until cooked. Remove egg, chop and combine with the vegetables.
  3. Add the crumbled stock cubes, hot water and vegetable mix to the pan with the rice and simmer until the rice and vegetables are cooked and all the water has been absorbed. Season to taste with soy sauce.
