  • 1 lb fettuccini
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 2 eggs
  • 1 cup freshly grated parmigiana
  • 4 garlic cloves thinly sliced

Directions

  1. While pasta is cooking fry garlic slices in olive oil and butter.
  2. Whisk together 2 eggs with cheese.
  3. Drain pasta reserving 1/2 cup pasta water.
  4. Add pasta to pan of olive oil and mix until pasta is coated.
  5. Remove from heat and slowly whisk in egg careful not to scramble it.
  6. Thin sauce as desires using pasta water.
  7. Season with salt and fresh pepper.
