  • 440g (2 cups) yellow split peas
  • 350ml extra-virgin olive oil, plus extra for drizzling
  • 3 onions, 1 chopped, 2 sliced
  • 4 garlic cloves, crushed
  • 2tbsp sherry vinegar
  • 40g (¼ cup) baby capers, drained and rinsed
  • Grilled pita, to serve
