Glazed Strawberry Scones 2WW

Ingredients

  • 2 cups High Protein Buttermilk pancake mix, like Kodiak
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/3 cup sweetener, like Health Garden , I prefer Health Garden, IMO, it doesn't have a chemical aftertaste and won't dry out your baked goods.
  • 8 tbsp. of a lite butter like Smart Balance lite
  • 3/4 cup Unsweetened Almond Milk
  • 1 egg
  • 1 ½ Cups of small diced strawberries. Gently press between 2 paper towels to remove some moisture
  • Glaze: 3 tbsp powdered sugar mixed with 1 ½ tsps of water.

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, whisk together pancake mix, baking powder, salt and sugar; mix thoroughly. Cut in butter using a fork, continue pressing butter into flour mixture until it resembles a moist sand.
  3. In another bowl, mix milk and egg together, and then add to the flour mixture. Mix just to incorporate, don’t over mix. Fold in diced strawberries and by 1 ½ tbsp or 1/8 cup scoop of batter on an ungreased cookie sheet.
  4. Bake for 20-25 minutes until brown. Let cool on cookie sheet 10-12 minutes and completely cool before applying glaze.
  5. If planning on freezing, do not add glaze, wrap individually in saran wrap and place all in a large freezer zip lock bag. Microwave 15-20 seconds each, add your topping of choice!!
