Preheat oven to 375 degrees F.
In a large bowl, whisk together pancake mix, baking powder, salt and sugar; mix thoroughly. Cut in butter using a fork, continue pressing butter into flour mixture until it resembles a moist sand.
In another bowl, mix milk and egg together, and then add to the flour mixture. Mix just to incorporate, don’t over mix. Fold in diced strawberries and by 1 ½ tbsp or 1/8 cup scoop of batter on an ungreased cookie sheet.
Bake for 20-25 minutes until brown. Let cool on cookie sheet 10-12 minutes and completely cool before applying glaze.
If planning on freezing, do not add glaze, wrap individually in saran wrap and place all in a large freezer zip lock bag. Microwave 15-20 seconds each, add your topping of choice!!
