Grain Salad

Ingredients

  • 1/2 cup boughlur wheat
  • 1/2 cup greenwheat freekah
  • 1/2 cup black or green lentils
  • 1/4 cup slithered almonds
  • 1/4 cup linseeds
  • 1/4 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup pine nuts
  • 1 pomegranate
  • Plain Greek yoghurt
  • 1/2 cup currants
  • 1/2 red onion
  • Bunch parsley
  • Bunch coriander
  • 2 lemons
  • Sherri vinegar or red wine vinegar

Directions

  1. Boil boughlur wheat, lentils and freekah for about 15mins
  2. Toast almonds, linseeds, pine nuts, pumpkin seeds and sunflower seeds in over tray
  3. Chop onion, parsley, coriander very finely
  4. Add all ingredients including currants and pomegranate seeds. Season with juice of 1-2 lemons and vinegar, salt and pepper.
  5. Serve with large spoon of plain Greek yoghurt
