Green Pea Soup with vegetabe topping

Ingredients

  • Soup:
  • 1 liter of stock (chicken or vegetable stock)
  • 500 gram fresh or frozen peas
  • 1 onion
  • 1 knob of garlic
  • A sprig of fresh mint leaves
  • Salt & pepper to taste
  • Topping (fx stirfry the following ingredients):
  • A couple of carots in slices or cubes
  • 1-2 onions, chopped
  • 1-2 knob of garlic, finly choped
  • A piece of white cabbage, corsly chopped in stripes
  • Extra topping:
  • A spoonful of Créme Fraiche or whipping cream in a swirl.
  • Some chopped parsley for health and decoration.

Directions

The soup:

  1. Cook all the soup ingredients together in a high pot.
  2. When it boils, let it simmer for 6-7 minutes.
  3. Put aside and prepare the topping.

The topping:

  1. In a wok heat a spoonful of penut oil
  2. Stirfry the topping ingredients over high heat for a few minutes.
  3. Put the vegetables in a bowl.
  4. Toast the skinned almonds in the rest of the peanut oil in the wok until slightly golde brown (not burned)
  5. Blend the soup with a stick-blender-machine until smooth
  6. Add 1 deciliter of cream and stir.
  7. Taste for more seasoning or cream.
  8. Serve immediately with topping and perhaps a spoonful of extra cream, créme fraiche og greek yoghurt.
  9. A slice of freshly baked bread goes very well together with the soup.
