Pound fresh chicken breasts and trim any fat. Slice tomato and set aside.
Whisk sauce ingredients together. Spread sauce liberally on both sides of chicken. Grill. Top with mozzarella slices and place in oven on low broil for 1.5-2 minutes until the cheese is lightly melted.
Heat a skillet with olive oil at medium heat. Grill tomato slices for 1-2 minutes per side and season lightly with sea salt and pepper.
Place tomato slices on top of chicken. Drizzle lightly with buffalo sauce. Serve and enjoy!
