  • For the flatbread pizzas:
  • 2 medium ears corn, shucked
  • 2 tablespoons unsalted butter, softened
  • 4 store-bought flatbreads (or naan)
  • 2 tablespoons olive oil
  • 2 cups shredded Gruyère cheese
  • 1 cup sliced fresh mozzarella cheese
  • 1/2 cup thinly sliced red onions
  • 1 cup arugula
  • Crushed red pepper flakes, for serving (optional)
