Healthy-ish Beet Oatmeal Cookies

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp. ground cardamom
  • 1 tsp vanilla
  • 1 cup oats
  • 1 cup grated raw beet (1 large beet)
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350’
  2. Cream together butter and sugars, then stir in egg, vanilla and yogurt.
  3. Add flour, baking soda, salt and cardamom. Stir until fully mixed. Add oats, beets, walnuts and raisins and stir until evenly distributed.
  4. Drop by tablespoons onto baking sheets.
  5. Bake for about 15 minutes, until beginning to brown around the edges.
