Preheat oven to 350
Line a cookie sheet with foil, allowing the foil to extend up and over the sides
Rub with butter or spray with non-stick cooking spray
Mix the oats, cranberries, nuts, cinnamon, salt, in a medium bowl
Combine the butter, sugar and honey in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Add the vanilla and stir, immediately remove from heat
Pour the butter mixture over the oats, mixing until well coated. Transfer to prepared pan using a spatula, press the oats evenly onto the pan
Bake until the top is golden brown. Usually 25-30 minuets but every oven varies
Let cool and then crumble into pieces
Store in airtight container
