Homemade Oreos

Ingredients

  • For the cookies:
  • 1½ cups spelt flour (gluten-free: use oat flour)
  • ⅓ cup unsweetened dark cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup butter, softened
  • 1 cup coconut sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • For the cream filling:
  • 4 tablespoons butter, softened
  • ¼ cup cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the butter and sugar together until smooth, about 1 to 2 minutes.
  4. Add the egg and vanilla and beat until combined.
  5. Slowly add the dry ingredients to the wet. Mix until the batter forms a ball and begins to pull away from the sides.
  6. Roll out the dough between two sheets of parchment paper until it is roughly ¼ inch thick.
  7. Use a small round cookie cutter to cut shapes out of the dough.
  8. Place the shapes on a parchment-lined baking sheet and bake for 10 to 12 minutes. Let cool.
  9. While the cookies are baking, make the cream filling.
  10. Beat all the ingredients until light and fluffy.
  11. To assemble, spread roughly 1 tablespoon of cream filling on one cookie, top with another cookie, and enjoy!
