Hummingbird Cake
Ingredients
- Cake:
- 3 cups all purpose flour
- 2 teaspoons baking powder, fresh
- 1/2 teaspoon baking soda
- 1 tsp salt
- 1 teaspoon ground cinnamon
- Ā½ teaspoon ground nutmeg (optional)
- 3 eggs
- 2 cups granulated white sugar
- 1 cup canola oil
- 2 tsp vanilla extract
- 1 8 oz. can crushed pineapple, with juice
- 2 cups mashed bananas (3-4 bananas)
- 1 cup finely chopped pecans
- Frosting:
- 1 lb cream cheese, softened
- 1 cup (2 sticks) unsalted butter, softened
- 2 lbs (32 oz) confectioners sugar
- 3 teaspoons vanilla extract
- 1 cup roughly chopped pecans, for topping (optional, toasted)
