Hungarian Mushroom Soup
Ingredients

- - 4 tbsp salted butter
- - 1½ cups white onions, chopped
- - 1 lb. mushrooms, sliced (crimini, button, etc.)
- - 2 tsp dried dill weed
- - 1 tsp each: dried thyme, sweet paprika, lemon juice
- - 2 cloves garlic, grated
- - 2½ cups broth
- - 2 tbsp soy sauce
- - 3 tbsp all-purpose flour
- - 1 cup half and half or milk
- - 1/3 cup sour cream or crème fraiche
- - 3 tbsp chopped parsley
Directions
**Instructions:**
1. Melt butter, sauté onions, add mushrooms, and cook for 8-10 minutes.
2. Add dill, thyme, paprika, garlic, and lemon juice. Cook for 2 minutes.
3. Add broth and soy sauce. Simmer on low to medium heat.
4. In a bowl, mix half and half with flour, removing lumps. Add to the soup while stirring.
5. Simmer soup to desired thickness. Do NOT boil.
6. Add sour cream, stir, and garnish with parsley.
