Indian Potato Curry

Ingredients

  • 2 Tbs ​Sesame oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin
  • 1 tsp Tumeric
  • ​1 Tbs Chana dal (uncooked)
  • 1 tsp Coriander
  • Salt to taste
  • Ground Ginger to taste
  • 2 Green Chilies, chopped (add more or less to adjust spice level)
  • 1 Onion, chopped
  • 2 Tomatoes, chopped
  • 3 Potatoes, cubed

Directions

  1. ​Heat the sesame oil in a pot. Add the mustard seeds, cumin, tumeric, and dal and sautee until the dal is browned. Add the green chilies.
  2. Add the onion and continue to sautee until browned.
  3. Add the tomatoes and salt and ground ginger to taste.
  4. Add the potatoes and coriander. Add water slowly until the curry is the right consistency (about 1/2 to 1 cup of water).
  5. Cover and cook until potatoes are soft.
