Season mozzarella with salt and pepper and wrap each piece with 2 slices of Prosciutto and place in plate overlapping each other in a triangle pattern.
Toss 1 cup of Arugula in Lemon juice, oil, salt and pepper. (Enough to eliminate bitterness). Build lettuce on top of prosciutto and mozzarella making it as high as possible.
Top off with 3 pieces of shaved Parmesan and drizzle oil around salad on plate
