Ingredients

  • 300g (3 cups) almond meal
  • 2 cups caster sugar
  • 2 egg whites
  • Grated rind of 1 lemon

Directions

  1. Mix almond meal and sugar together and then add egg whites and lemon rind.
  2. Using your hands, work until the mix is like wet sand and clings together.
  3. Shape into walnut sized ball, flatten slightly and dust generously with icing sugar.
  4. Cook for 10-12 min at 180°C.
  5. Makes about 24.
