Jerk Rub/ Marinade

Ingredients

  • 3/4 cup brown sugar
  • 6 tablespoons kosher salt
  • 1 1/2 teaspoons red pepper flakes 🔸
  • 3/4 teaspoon celery seed 🔸
  • 3/4 teaspoon caraway seeds 🔸
  • 3/4 teaspoon coriander seeds 🔸
  • 3/4 teaspoon cumin seeds 🔸
  • 3/4 teaspoon fennel seeds 🔸
  • 3/4 teaspoon clove 🔸
  • 1 tablespoon black pepper 🔸
  • 3/4 teaspoon ground ginger
  • 3/4 teaspoon nutmeg
  • 3 tablespoons garlic powder
  • 1 tablespoon smoked paprika
  • 1 1/2 teaspoons cayenne pepper
  • 3/4 teaspoon cinnamon
  • 1 tablespoon allspice
  • 2 tablespoons onion powder
  • 1 tablespoon parsley dried
  • 4 tablespoons thyme dried
  • 3/4 cup pickapepper
  • 1/4 cup Cider vinegar
  • 3 tablespoons shallots (dried onion flakes)

Directions

  1. Toast all whole spices (🔸) let cool and grind
  2. Add all ingredients and season meat and allow to marinate for at least 3 hours. I prefer at least 6-12 hours
  3. Grilling or baking produce best product
