Kefir Tzatziki Sauce

Ingredients

  • ½ cup whole milk kefir
  • ½ cucumber, grated on a box grater
  • 1 lemon, juiced
  • 3 tbsp fresh dill, chopped
  • Granulated garlic, to taste
  • Granulated onion, to taste
  • Salt, to taste (salt liberally for best flavor)

Directions

  1. Grate the cucumber into a bowl.
  2. Sprinkle with salt and let sit for about 5 minutes.
  3. Squeeze firmly by hand or through a clean kitchen towel to remove as much liquid as possible.
  4. In a medium bowl, whisk together the kefir and lemon juice.
  5. Fold in the squeezed cucumber and fresh dill. Add the granulated onion, granulated garlic, and salt.
  6. For the best results, let the flavors meld in the refrigerator for at least 30 minutes.
  7. It stays delicious for up to 24 hours.

For the grilled swordfish (or any fish):

  1. Marinate for 20-30 minutes in lemon juice and olive oil. Seasoned with some garlic and herb powder. Serve along side some yummy Kefir Tzatziki!
