Key Lime Pie Cupcake Version 3.0

Ingredients

  • 2 ¼ cups cake flour
  • 1 TBSP baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, at room temperature
  • 1 ½ cups granulated sugar
  • 2 egg whites
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup milk
  • ½ cup buttermilk
  • Key Lime Pie Filling
  • 8 oz mascarpone cheese, at room temperature
  • 5 oz key lime juice
  • 9 oz sweetened condensed milk
  • Key Lime Pie Filling Buttercream Frosting
  • ½ cup unsalted butter, at room temperature
  • 6 to 8 cups powdered sugar
  • 1 ½ cups key lime pie filling
  • 3 TBSP key lime juice, and most likely more to thin out frosting
