Kodiak Banana Bread

Ingredients

  • 3 bananas overripe*
  • 2/3 cup sugar
  • 2 eggs
  • 2/3 cup Greek yogurt plain, non-fat
  • 1/2 cup milk
  • 1/3 cup butter melted
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 2 cups Kodiak Cakes Power Cakes
  • 1 tsp baking powder

Directions

  1. Preheat oven to 350F. Prepare a 5 x 9-inch loaf pan by spraying generously with non-stick cooking spray.
  2. In a large mixing bowl, mash bananas with a fork. Add sugar, eggs, Greek yogurt, milk, melted butter, vanilla extract, and cinnamon; mix well.
  3. Add Kodiak Cakes Power Cakes mix and baking powder to wet ingredients; stir until just combined.
  4. Pour banana bread mixture into prepared loaf pan; use a rubber spatula to evenly distribute mixture. Bake for 40-45 minutes, until an inserted toothpick comes out clean.
