Ingredients

  • 2 1/2 tbsp olive oil
  • 2 onions thinly sliced
  • 6 cloves garlic minced
  • 2 tbsp chopped basil
  • 1 tap salt
  • 1/2 tsp pepper
  • 3 carrots
  • 2 zucchini
  • 1 head broccoli
  • 12 lasagne sheets
  • Tomato pasta sauce
  • Tofu Ricotta:
  • 400g firm tofu
  • 2/3 cup Miso
  • 2/3 cup water
  • 1/2 cup tahini
  • 1/2 cup oil
  • 5 garlic cloves
  • 1 1/2 dried basil
  • 1 1/2 dried oregano
  • 3/4 salt

Directions

  1. 1. Ricotta: blend. (Keeps 2 days in fridge)
  2. 2. Add vegetables to a pan and.cook
  3. 3. Mix vegetables into ricotta mix
  4. 4. Cook lasagne sheets until soft
  5. 5. Coat sheets in oil, spread mix over sheet and roll and pour tomato sauce over.
  6. 6. Cover with foil, bake about 55 mins. Remove foil and bake for further 15 mins
