Lazy Thai Ginger Pumpkin Soup With Coconut Cream

Ingredients

  • 1 tbs coconut oil
  • 3 organic carrots, peeled and chopped*
  • 2 organic celery sticks, chopped
  • 1/2 medium yellow onion, diced
  • 2 tbs freshly grated ginger root
  • 1 garlic clove, pressed
  • 2 BPA-free cans organic pumpkin puree (be careful not to buy pumpkin pie filling!)
  • 16-ounces organic vegetable broth
  • 1-2 tsp curry powder
  • 1/2 tsp red chili pepper flakes
  • 1-2 tsp sea salt
  • black pepper to taste
  • 1 can light coconut milk (reserve 1-2 tablespoons for garnish)
  • 2-3 kaffir lime leaves**
  • For garnish:
  • 1 bunch organic cilantro, rosemary, or flat leaf Italian parsley
  • 1/4 cup pumpkin seeds
  • 1-2 tbs coconut milk
