LEMON BLUEBERRY WAFFLES

Ingredients

  • 3/4 cup unsweetened almond milk + 1 tsp white or apple cider vinegar
  • 2 Tbsp melted vegan butter (like Earth Balance) or sub coconut oil
  • 3/4 tsp vanilla extract
  • juice of 1 small lemon (~2 Tbsp)
  • zest of 1 small lemon
  • 1 Tbsp agave nectar or maple syrup (or honey if not vegan)
  • 3/4 cup brown rice flour
  • 1/4 cup almond meal (ground from raw almonds)
  • 1/4 cup potato starch (not flour)
  • 2 Tbsp tapioca flour
  • 2 flax eggs (2.5 Tbsp flaxseed meal + 5 Tbsp water)
  • pinch sea salt
  • 1 tsp baking powder
  • 1 Tbsp cane sugar (sucanat), or sub granulated sugar
  • 2/3 cup blueberries (fresh or frozen)
