Lemon Pound Cake Muffins

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp lemon extract
  • 1 3/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup sour cream
  • Glaze
  • 2 cups powder sugar
  • 3 TBSP lemon juice

Directions

  1. Cream butter and sugar. Add eggs and extracts, beat well. Combine flour, salt, and baking soda and add to creamed mixture, alternately with sour cream. Fill greased muffin cups.
  2. Bake at 400 degrees for 18-20 minutes. Cool for 5 min, then put on rack.
