  • 1 tablespoon tamari.
  • 1 tablespoon coconut oil.
  • 1 small red onion, finely sliced.
  • 4cm piece of ginger, cut into matchsticks.
  • 1 red, yellow or orange capsicum, sliced.
  • 1 small head of broccoli.
  • 1/2 cup finely sliced button mushrooms.
  • 10 snow peas, trimmed.
  • 2 bunches bok choy, washed, ends trimmed.
  • 1/2 cup coriander leaves.
  • 1/2 cup mint leaves (optional).
  • 1/2 cup cashews.
