Ingredients

  • 250g large macaroni or penne past
  • 50g unsalted butter
  • 50g plain flour
  • 600ml whole milk
  • 200g cheddar cheese
  • 1tsp mustard (English or Dijon)
  • Pinch of nutmeg
  • 100g unsmoked bacon/hock ham

Directions

  1. Pre heat oven to 190c
  2. Boil pasta
  3. Meanwhile, melt butter, add flour and stir to combine and cook for 1 minute
  4. Gradually stir in milk and bring to boil stirring continuously.
  5. Remover from heat and add 3/4 cheese and add nutmeg, mustard and bacon pieces
  6. Add the pasta to the sauce and stir well
  7. Pour all into oven proof dish and scatter with remaining cheddar
  8. Oven for 20mins
