1. make sweet potato in Microwave by washing, poking holes in it with a fork, and microwaving for 5-6 mins. test the potato with a knife, should slide through the center easily, when finished!
2. While the tater is cooking in the microwave, Stirfry the onions on medium heat for 3-5mins (Either use a little butter or water in bottom of the pan)
3. Add thinly chopped zucchini, salt, and garlic powder, if veggies begin to stick to pan, add about a table spoon or two of more water! keep stirfrying until everything has softened. (about 3-5mins)
4. Chop up tater and add to the rest of the veggies!
5. Start your eggs! Heat pan over medium heat.
6. crack eggs in bowl, add tablespoon or two of coconut milk, or water, or regular milk and whisk them up!
7. Add a little butter or water to bottom of frying pan and add eggs. Using a spatula continuously move them around in a circular motion to keep them from sticking to the pan. They're finished when they are still just a little wet!
