Massaman Curry

Ingredients

  • • 2" piece of lemongrass - 2
  • • 1"piece ginger
  • • 2 garlic cloves
  • • 1 tsp cumin seeds
  • • 1 tsp coriander seeds
  • • 1 tsp cinnamon powder
  • • 1/2 cup coconut chunks
  • • 2 tbsp nut butter
  • • 1 red or green chili
  • • 2 tbsp soy sauce or tamari
  • • 1 tbsp lemon juice
  • • 2 soft dates
  • • 2 tsp Himalayan salt
  • • 2 cups vegetable stock or drinking water
  • • 2 cups of mixed vegetables like mushrooms, bell peppers, broccoli, potatoes with skin, etc.

Directions

  1. 1) Steam vegetables until cooked but firm.
  2. 2) In the meantime, make a paste of all the other ingredients, except the vegetables. You may use the steaming water here.
  3. 3) Place vegetables in a saucepan, add in the paste.
  4. 4) Let it come to a boil. Simmer for 1 minute.
  5. 5) Serve hot with any kind of millet or brown rice.
  6. Can be had as a soup too😋
