#Meatballs

Ingredients

  • 1 lbs ground beef
  • 1 lbs ground lamb or pork. (Lamb is best)
  • 1 small onion fine dice
  • 2-3 cloves garlic fine dice
  • 1/4 to 1/2 cup chopped parsley
  • 2 eggs
  • 1 to 2 cups or more fresh breadcrumbs, moistened with milk
  • 1 tsp dried oregano
  • 1/2 to 3/4 cup grated parmigiana
  • 1 1/2 tsp kosher salt
  • 2 Tbsp olive oil
  • Black pepper

Directions

  1. Cook onions and garlic in olive oil (about 2 tbsp) till water is gone. Add a pinch of salt first. Set aside to cool
  2. Mix meat well with the 2 eggs and cheese mixture.
  3. Mix the meat mix with of the ingredients with the garlic onion mix. Be gentle
  4. Add the breadcrumbs and parsley and mix again
  5. Form into 50 gram balls. If too wet add some dry breadcrumbs. 1 Tbsp at a time
  6. Put into the fridge to chill
  7. Put into tomato sauce and cook for a half hour on low simmer
