  • 1 lbs ground beef

  • 2 to 3 oz. Nduja
  • 1 small onion fine dice
  • 4 cloves garlic fine dice
  • 1/4 to 1/2 cup chopped parsley
  • 2 eggs
  • 1 cup panko or regular breadcrumbs, moistened or moist
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 to 3/4 cup grated parmigiana
  • 1 1/2 tsp kosher salt
  • 2 Tbsp olive oil
  • Black pepper

Directions

  1. Cook onions and garlic in olive oil (about 2 tbsp) till water is gone. Add a pinch of salt first. Set aside to cool
  2. Mix meat well with the 2 eggs then Mix the rest of the ingredients with the garlic onion mix. Be gentle
  3. Form into 50 gram balls. If too wet add some dry breadcrumbs. 1 Tbsp at a time
  4. Put into the fridge to chill
  5. Fry balls in large frying pan covered in olive oil till browned on all sides
  6. Put into tomato sauce and cook for a half hour on low simmer
