Mediterranean Tex Mex Salad

Ingredients

  • 5 cups chopped or torn Romaine lettuce
  • 3 boneless, skinless chicken breasts cooked and shredded or cubed
  • 2 large Roma tomatoes diced
  • 15 ounce can black beans drained and rinsed
  • 15 ounce can whole corn kernels drained and rinsed
  • 5 green onions sliced
  • .25 cups chopped, fresh cilantro
  • 1 tablespoon lime juice half of one lime
  • 0.5 cup cubed cheddar cheese
  • 1 cup ranch dressing
  • 1 large avocado diced
  • 1 cup broken tortilla chips

Directions

  1. Start by finding the largest bowl that you own. Add the lettuce, tomatoes, bell pepper, black beans, corn, green onions, cilantro, and cheese.
  2. Drizzle on the lime juice and Ranch Dressing. Toss to combine
  3. If serving immediately, add in the tortilla chips and avocado and gently toss together. Serve with additional chips
