Minestrone with Italian Sausage

Ingredients

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 2 celery ribs, chopped
  • 1 medium leek (white part only), chopped
  • 3 garlic cloves, minced
  • 1 medium zucchini, cut into 1/2 inch pieces
  • 1/4 pound fresh green beans, cut in 1/2 inch pieces
  • 2 cans (14.5 oz) tomatoes with basil oregano and garlic
  • 3 cups shredded cabbage
  • 1/2 cup uncooked shell pasta
  • 1 tsp basil
  • 1 tsp oregano
  • 1/4 tsp pepper
  • 1 can (15 oz) garbanzo beans or chick peas, drained
  • 3 TBSP parsley
  • 1/3 cup parmesan cheese

Directions

  1. Cook sausage and onion. Stir in carrots, celery, leek and garlic for 3 minutes. Add zucchini and green beans, stir for 2 minutes. Then stir in the broth, tomatoes, cabbage, and spices. Bring to a boil Reduce heat. Cover and simmer for 45 minutes. Return to boil, add beans and parsley and pasta. Cook for 6-9 minutes. Serve with Parmesan cheese.
