Minestrone with Italian Sausage
Ingredients
- 1 pound Italian sausage
- 1 large onion, chopped
- 2 large carrots, chopped
- 2 celery ribs, chopped
- 1 medium leek (white part only), chopped
- 3 garlic cloves, minced
- 1 medium zucchini, cut into 1/2 inch pieces
- 1/4 pound fresh green beans, cut in 1/2 inch pieces
- 2 cans (14.5 oz) tomatoes with basil oregano and garlic
- 3 cups shredded cabbage
- 1/2 cup uncooked shell pasta
- 1 tsp basil
- 1 tsp oregano
- 1/4 tsp pepper
- 1 can (15 oz) garbanzo beans or chick peas, drained
- 3 TBSP parsley
- 1/3 cup parmesan cheese
Directions
Cook sausage and onion. Stir in carrots, celery, leek and garlic for 3 minutes. Add zucchini and green beans, stir for 2 minutes. Then stir in the broth, tomatoes, cabbage, and spices. Bring to a boil Reduce heat. Cover and simmer for 45 minutes. Return to boil, add beans and parsley and pasta. Cook for 6-9 minutes. Serve with Parmesan cheese.
