Mozzarella Meat Loaf

Ingredients

  • 1 1/2 lbs Ground Beef
  • 1/2 Cup Dry Bread Crumbs
  • 1 Egg
  • 1 TBSP minced Onion
  • 3/4 tsp Salt
  • 1/2 tsp Oregano
  • 8 Ounces tomato sauce, divided
  • 1 1/2 Cups Shredded Mozzarella Cheese

Directions

  1. In large bowl, combine beef, crumbs, egg, onion, salt, oregano and 3/4 cup of tomato sauce and set aside
  2. Using waxed paper roll mixture out, sprinkle with cheese and top with remaining tomato sauce.
  3. Roll mixture like a jelly roll
  4. Place seam down and secure ends
  5. Place in non-stick bread pan
  6. Bake at 375 for 30 minutes then drain any fat that has accumulated and bake for an additional 30 minutes.
