Ingredients

  • 2 (sheets) rice paper (or just use glad bake)
  • 3/4 cup (110g) plain flour
  • 2 tablespoon cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 cups glazed/dried fruit - pears, pineapple, dates, apricots, craisins etc
  • 2 cups roasted mixed nuts - almonds, macadamia, hazelnuts, pistachios etc
  • 1/3 cup (120g) honey
  • 1/3 cup (75g) caster sugar
  • 1/3 cup (75g) firmly packed brown sugar
  • 2 tablespoon water
  • 100 gram dark eating chocolate, melted
  • Snow sugar for dusting
