Peanut Butter Tagalong Cupcakes

Ingredients

  • 1 cup cake flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1/4 cup Greek yogurt (sour cream can be substituted)
  • 1/4 cup milk (I used 1%)
  • 2 teaspoons vanilla extract
  • 1 teaspoon vanilla bean paste
  • 16-18 Peanut Butter Tagalongs/Patties
  • 3 egg whites
  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, softened slightly but still cool
  • 1 cup peanut butter (I used creamy)
  • 6 Peanut Butter Tagalongs/Patties, chopped finely
  • 1/2 teaspoon kosher salt
  • 6 ounces milk chocolate, melted
  • 8-9 Peanut Butter Tagalongs/Patties, cut in half (for garnish)
