Pepper Jack Soup

Ingredients

  • 1 Medium Onion, chopped
  • 3 Tbsp oil
  • 3 Medium Potatoes, diced
  • 2 Cups Milk
  • 1/4 Cup Flour
  • 1/4 Cup Butter
  • 1/2 Cup instant dry milk
  • 1 1/2 tsp salt
  • 4-6 ounces cubes pepper jack cheese

Directions

  1. 1- In large fry pan cook till transparent 1 Medium onion, 3 Tbsp oil.
  2. 2- Add 3 Medium potatoes diced add water to cover.
  3. 3- Cook 10-15 minutes, till potatoes are cooked.
  4. 4- In large saucepan combine 2 cups milk, 1/4 cup flour, 1/4 cup butter, 1/2 cup dry milk.
  5. 5- Cover over low heat, stirring constantly until thick and smooth.
  6. 6- Add: potato mixture, 1 1/2 tsp salt and 4-6 ounces cubes pepper jack cheese.
  7. 7- Heat through until cheese melts.
