Pesto Muffin Pizza

Ingredients

• 1 x 67g wholemeal, english muffin
• 50g (2 tbsp) pizza sauce or tomato paste
• 22g (1 tbsp) basil pesto
• 75g (5) cherry tomatoes, chopped
• 50g mozzarella cheese

Directions

Preheat the grill to medium. Line a baking tray with baking paper.

Lightly toast both English muffin halves.

Spread the pizza sauce onto each muffin half, followed by the pesto. Top with the tomatoes and sprinkle over the cheese.

Place under the grill for 3 to 4 minutes, or until the cheese has melted.
