Pesto Muffin Pizza
Ingredients
- 1 x 67g wholemeal, english muffin
- 50g (2 tbsp) pizza sauce or tomato paste
- 22g (1 tbsp) basil pesto
- 75g (5) cherry tomatoes, chopped
- 50g mozzarella cheese

Directions
- Preheat the grill to medium. Line a baking tray with baking paper.
- Lightly toast both English muffin halves.
- Spread the pizza sauce onto each muffin half, followed by the pesto. Top with the tomatoes and sprinkle over the cheese.
- Place under the grill for 3 to 4 minutes, or until the cheese has melted.
