PH Polenta Cakes

Ingredients

  • 1 1/2 gallons of Water + 1/4 Veggie Base
  • 2 qts of Polenta
  • 2 cups of Grated Parmesan
  • 4 tsp of Salt
  • 1 tsp of Pepper

Directions

  1. In a medium pot, bring water & veggie base to a boil
  2. Slowly sprinkle in polenta while whisking to prevent clumps
  3. Reduce heat to low and continue cooking for 10 minutes, whisking often.
  4. Turn off heat and stir in Parmesan, Salt and Pepper.
  5. Wrap pot and place in warmer for 30 minutes.
  6. Split into two of the long SKINNY sheet pans and wrap with plastic wrap
  7. Let cool to room temperature
  8. Place in walk in for at least 2 hours
  9. Carefully flip over onto table WITH PLASTIC STILL ON
  10. Trim edges and carefully slice into equal sized pieces.
