Ingredients

  • 500g red potatoes or any
  • 1 large onion
  • 150ml chicken stock
  • Thyme
  • Chilli

Directions

  1. Peel potatoes and slice 2-3mm
  2. No washing
  3. Thin slice onions
  4. Heat veg oil and butter to frying pan, add onions
  5. Fry until soft
  6. Add to potatoes, season and spread evenly in ovenproof dish
  7. Oven to 200c
  8. Pour stock into dish, add thyme and chilli
  9. Into oven for 35 mins
  10. Press potatoes down then brush with butter
  11. Put back for 10 mins to crisp
