  • 0.2g Yeast
  • FINAL DOUGH
  • 250g Bread flour
  • 125g Water
  • 1.5 g Yeast
  • 10 g salt

Directions

  1. Mix Poolish ingredients, cover and ferment overnight ~ 8 hrs
  2. Autolyse flour and water (20 min)
  3. Add yeast and Poolish, fully incorporate and allow to rest (20 min)
  4. Add salt and pinch into dough, rest (20 min)
  5. Perform first fold
  6. Rest 20 min
  7. Perform second fold
  8. Rest 20 min
  9. Perform third fold
  10. Rest 20 min
  11. Divide and shape, put in proofing basket
  12. Allow to proof 27c ~ 4 hrs
  13. Place into fridge to slowly ferment 6hrs
  14. Preheat oven 240c
  15. Turn over onto tray lined with baking paper
  16. Bake with steam for 15 min
  17. Reduce temp to 220 for the last 20 min
