Pork And Shrimp With Udon

Ingredients

  • Seasoned ground pork (mine was already cooked)
  • Minced lemongrass
  • Minced garlic
  • Minced hot chili
  • Minced ginger
  • Chopped onion or shallots
  • Chopped mushroom
  • Diced daikon radish
  • 1 can coconut milk
  • Fish sauce
  • Shrimp cut into bite sized chucks
  • Frozen udon noodles
  • Thai basil

Directions

  1. If ground pork is not already seasoned and cooked, do so. Remove from skillet
  2. Cook, garlic, ginger, onion, chili, lemongrass in leftover pork fat or neutral oil
  3. Add mushrooms and daikon radish. Sauté until mushroom has mostly released liquid.
  4. Add coconut milk and fish sauce bring to a simmer and cover until pork is cooked through. About 10 minutes.
  5. Add shrimp and udon noodles and simmer until cooked through.
  6. Turn off heat and add Thai basil, stir.
  7. Top with more fresh Thai basil
