Portobello Pot Roast - A Virtual Vegan

  • 2 Tbs. olive oil
  • ▢ 1 large onion sliced
  • ▢ 2 cloves garlic pressed
  • ▢ 3 tablespoons flour
  • ▢ 1 teaspoon rubbed sage, opt.
  • ▢ 1 teaspoon dried basil, opt.
  • ▢ 3 cups vegetable broth divided
  • ▢ 4 large potatoes quartered
  • ▢ 4 large carrots cut into 3-inch pieces and other root veggies (beets, parsnips, turnips) plus celery
  • ▢ Salt and freshly ground black pepper or lemon pepper to taste
  • ▢ 2 teaspoons vegan Worcestershire sauce , or 1 tablespoon of soy sauce or tamari
  • ▢ 4 sprigs fresh thyme
  • ▢ 1-2 sprigs fresh rosemary
