Ingredients

  • 2 tbs. olive oil (or) 1 stick of butter
  • 1-1/4 cups quartered cherry tomatoes
  • 1-2 cloves garlic, minced
  • 1/4 tsp. red pepper flakes
  • 1 lb. pasta
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup mascarpone cheese
  • 1/2 cup sliced fresh basil
  • Protein of your choice

Directions

  1. Prepare pasta as directed.
  2. In a large deep skillet in medium, heat oil or butter. Add protein, tomatoes, garlic, and red pepper flakes. Cook, stirring occasionally, until protein is cooked and tomatoes are wilted.
  3. Add cooked pasta and season with salt and pepper.
  4. Add mascarpone cheese and basil. Serve.
