Quinoa Cauliflower Salad

Ingredients

  • Quinoa
  • Cauliflower
  • Onion, chopped
  • Cherry tomatoes, cut in half
  • Pomegranate seeds
  • 1 tablespoon flavored balsamic vinegar dressing (e.g. Fig & walnut balsamic dressing)
  • Parmesan cheese

Directions

  1. Prepare the quinoa according to the instructions on the package
  2. Steam the cauliflower until it's soft enough to pierce with a fork (5-7 min)
  3. In a pan, sauté the onion until soft and slightly caramelized
  4. Add the cauliflower to the pan and and cook until slightly browned
  5. Add all ingredients to the quinoa and stir everything together. Serve on a bed of greens
