Quinoa Tex Mex Skillet

Ingredients

  • 1tsp olive oil
  • 2-3 garlic cloves minced
  • 1 red onion diced
  • 1/2 tsp cumin
  • 1/4 tsp chilli powder
  • 2 tbsp tomato paste
  • 1 cup quinoa rinsed
  • 2 cups chicken broth
  • 1 can corn
  • 1 can black beans
  • 1cup shredded cheddar cheese

Directions

  1. Heat olive oil on medium heat add garlic cloves cook for 2 mins
  2. Add onion, cumin, chilli powder, tomato paste and cook on medium heat 4-5 mins
  3. Cook quinoa in chicken broth bring to boil then simmer 10-12 mins covered
  4. Add to onion mixture add black beans, corn, and cheese and heat until cooked
